Chocolate Truffles
Makes 50

400g pitted dates
400g almonds (or 200g almonds, 200g macadamia nuts)
5 heaped tbsp cocoa
juice of 1 small orange and some of the zest
extra almond meal
desiccated coconut for coating
cocoa for coating

Place dates in a bowl and cover with boiling water. Leave to soak for 15 minutes.
Grind the nuts in a food processor, until they are of a fine consistency.
Place into a large bowl.
Strain the dates and place in the food processor with the cocoa, juice and zest.
Add half the juice at first then add more later if the mixture is too dry.
Add the date mixture to the ground-nuts in the large bowl and mix with a spoon.
If the mixture is too dry add the remaining juice, a little at a time, until it is at a consistency that can be rolled into balls.
If the mixture is too wet add extra almond meal until it is at a consistency that can be rolled into balls.
Roll the mixture into balls then coat them in coconut or cocoa.
