
Banana Choc Chip Muffins
Makes 12
1 cup Self Raising Flour, sifted
½ cup white chocolate bits
½ cup dark chocolate bits
1/3 cup brown sugar, firmly packed
¼ cup desiccated coconut
½ tsp bi-carbonate soda
½ cup mashed banana
½ cup milk
50g butter, melted
1 egg, lightly beaten
Preheat oven to 200C, 180C fan forced.
Line a 12-hole muffin tin with large paper patty pans.
Place the flour, white and dark chocolate bits, sugar, coconut and soda in a large mixing bowl.
Combine banana, milk, butter and egg in a medium bowl, gently mix, then add to the flour mixture and stir until just combined.
Spoon the batter into each paper patty pan.
Bake for 15 minutes or until muffins are well risen and golden.
Serve muffins warm.
*This recipe can also be made as a loaf, just spoon the mixture into a greased loaf tin and cook for 40 minutes. If it browns too quickly cover with foil and continue cooking.
