Makes 1 cup
2 tsp Dijon mustard
2 tsp vinegar
1 clove garlic, peeled
2-3 tbsp sweet chilli sauce
2 tbsp lime juice
salt & pepper
1-2 cups light olive oil
Place all ingredients except oil in a food processor and whiz until smooth and well mixed..
With the motor still going add the oil in a slow continuous stream until it is a consistence that you like.
Taste it to see if you need to add extra salt or pepper.
